Ever since I managed to perfect sweet potato saag aloo, I have wanted to work on a healthy curry. I really enjoy Indian spices and heat but curries are renowned for being unhealthy. So I got thinking and came up with the below main dish to go with a sweet potato saag aloo.
I chose the spices and flavours that I wanted to include: garlic, pepper, nutmeg, coriander, curry powder, tarragon. I put these, with some chopped onion, lemon juice and water into a pan and brought to the boil. Once it had boiled, I let it simmer for a few minutes then removed from the heat, added chopped chicken and covered. After 10 mins, the chicken was done and ready to be served! |
I really love poached chicken anyway (and as an aside- you can do this with any selection of herbs or spices- I poached breasts to make a lovely 'roast' dish when cooking for Mother's Day) and it makes the chicken so moist and full of flavour.
This was really nice with the saag aloo but also with a dip of sesame seeds, balsamic vinegar, garlic oil and cucumber- it was perfect! And from what I can work out, a very healthy meal indeed!
