I have very recently come across Lauren's Latest. Lauren is amazing and posts wonderful recipes that make me hungry all times of the day. She also has a Facebook page where she shares posts that she has seen from other websites. So do follow her- it is worth it. One of these posts was the Open Faced Croque Monsieur. As someone who is OBSESSED with croque monsieurs, I had to try this.

Make a cheese sauce, by combining flour and butter in a roux, and then adding milk, salt, pepper and nutmeg, and then cheese. Also fry some chopped bacon (if you are making my breakfast version).
Place bread in a greased oven dish, with or without mustard (your preference- Lauren liked Dijon, Mother likes French and Husband likes without). Add your bacon (or ham if you are doing the regular version), pour over the cheese sauce and then add some grated cheese on top. I used a mixture of mature cheddar and red leicester which has given it that lovely colour. Place in the oven at a medium heat for about 10-15 mins until browning slightly. Then serve.
