I don't have much of a sweet tooth and therefore I find it a bit of a waste to put loads of effort in creating something that I am not really going to enjoy. One of the recipe books that inspired me to start cooking was Lorraine Pascale's and in it was a really simple ice-cream and swiss roll cake. So I gave it a go! I can't find the recipe online from Lorraine herself, and refuse to link to those breaching copyright so you will have to make do with my couple of photos and brief description OR buy her book!!
Take a bowl and line it with sections of swiss roll. I used the cheap as chips version from my supermarket and it was great. Then fill with soft ice-cream and put back into the freezer to set before removing the bowl. It takes a lot of ice-cream though- and I ran out of my mint chocolate Neapolitan that I was using and had to top up with plain vanilla. But it tasted just as good! Before serving, I sprinkled with a dusting of icing sugar. Let's be honest, who doesn't love a snowy dusting of sugar!
It keeps for absolutely ages if you cover it (use the bowl you made it in) in the freezer. That's if it lasts that long of course!
