I do love a good curry, but am not a huge fan of rice. Considering I love risotto, I do find this a little strange but it is true. So whenever I order a curry, my side is always Saag Aloo or Bombay Aloo (translation: spinach potatoes or spicy potatoes). Naturally I had to try to make my own when hubby wanted to slow cook a curry. I found this recipe from the BBC and as always adapted it to my own needs.
In short, fry garlic, chilli, onion and spices like ginger, pepper and cumin, add potatoes with a small amount of water, cover, then at the last moment, add spinach to wilt.

It is like frying the potatoes in water, but you do have to keep an eye to make sure that there isn't too much water. They need to be like fried potatoes but slightly softer rather than like boiled potatoes. Go with your gut really.
Now the best thing about this recipe is that I have used sweet potatoes instead and found no problems apart from a shorter cooking time but the other was mixing up the spices. I have used herbs such as rosemary and thyme to make a nice herby side dish for chicken; I have gone with fennel; I have used cinnamon and nutmeg... the list goes on. It really just depends on what you are serving it with and your taste buds. Onion and garlic are always a given, but chilli and pepper can be removed for a more subtle side. Makes a change from usual boiled, mashed or chipped potatoes.
