This is a wonderful dish, often referred to as 40 garlic chicken or 100 garlic chicken. I just refer to it as many garlic or garlicky chicken as it really doesn't matter how many cloves you use, just as long as you use a lot! I use a slow cooker for cooking mine, but this could easily be adapted for oven cooking.
First off, prepare a whole lot of garlic. Leave some whole, chop some and crush some. You will need some time to do this as it does take ages. Take a whole chicken, remove the innards (or buy with innards removed already) and oil and herb the skin. Use some of the garlic to stuff the chicken and put the rest in and around the bird in the pot. |
This is wonderful served (with some of the garlic if you are a big garlic fan) on a green salad with some sun dried tomatoes and feta cheese. A really wonderful dish, which is easily prepared and creates a wonderful aroma while cooking. This would be a nice, light evening meal for family gatherings or as an easy lunch. |
