You may have read that hubby and I recently got ourselves an allotment. We inherited a few plants from the previous owner including a blackcurrant bush, two gooseberry bushes, many raspberry canes and some wild strawberry plants. We had a huge harvest and had more fruit than we knew what to do with, so had to get creating! I will post later about what we did with the strawberries, raspberries and gooseberries, but with the blackcurrants, we made our own cordial. |
First you have to remove the stalks and any leaves that have attached. Then you boil them with sugar and water until they go to a mush. This does take a while and is hot work (especially if you choose a lovely summer's day as I did!). Then you need to strain. We used a sieve but I have read that for a smoother cordial, you can use a muslin. Then you have a cordial ready to be diluted to taste.
